Oxtail Kare Kare Stew

  • 4 1/2 pounds beef oxtails
  • 3 cups water, or more as needed
  • 2 beef bouillon cubes
  • 1/2 pound bok choy, chopped
  • 1/2 pound long beans, cut into bite-sized pieces
  • 1/2 pound eggplant, cubed
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon achiote powder
  • 3 tablespoons smooth peanut butter

Start by placing oxtails in a large cooking vessel and pouring in water. Bring the mixture to a rolling boil, then lower the heat to a moderate level and let it simmer for at least 2 hours, periodically adding more water as needed to maintain the desired consistency. Make sure to remove any excess fat that rises to the surface of the liquid during this time

Once the oxtails have reached the desired level of tenderness, transfer them to a serving plate. Next, add beef bouillon cubes to the pot and stir until they have fully dissolved. Then, add bok choy, beans, and eggplant to the pot and let them simmer in the flavorful liquid for 10-15 minutes, or until they are tender

While the vegetables are cooking, heat some olive oil in a large pan over medium heat. Add sliced onion and minced garlic to the pan and cook, stirring occasionally, until they are softened and fragrant, about 5 minutes. Stir in a pinch of achiote powder to add depth to the dish. Then, stir in peanut butter until it has melted and is fully incorporated into the mixture. Add about half of the simmering broth to the pan and let it simmer for 5 minutes, stirring occasionally. Add the cooked oxtails back to the pan and cook for another 5 minutes, stirring frequently. Finally, transfer the remaining broth and vegetables to the pan and stir everything together before serving hot
