Oven-Baked Jerk Chicken

  • 1 teaspoon ground allspice
  • 1 teaspoon packed brown sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried minced garlic
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon dried thyme leaves
  • 1 (2 to 3 pound) whole chicken, cut into pieces
  • 1/4 cup vegetable oil

Combine salt, allspice, brown sugar, onion powder, garlic, nutmeg, black pepper, ginger, cayenne pepper, cinnamon, and thyme in a large bowl. Add chicken pieces to the bowl and thoroughly coat them with the seasoning blend. Cover the bowl with a lid or plastic wrap and refrigerate for 2 to 4 hours.

Heat your oven to 350 degrees Fahrenheit. Drizzle vegetable oil into a 9x13-inch baking dish, making sure to cover the entire surface.

Carefully place chicken pieces skin-side up into the prepared baking dish. Place the dish in the preheated oven and bake until the juices run clear and the chicken is no longer pink near the bone, taking about 1 hour and 20 minutes.

Remove the dish from the oven and insert an instant-read thermometer into one of the chicken pieces, near the bone. Check that the internal temperature reaches 165 degrees Fahrenheit.

Switch your oven to broil mode and cook until the skin crisps, taking 2 to 5 minutes.
