- salt to taste
- 2 tablespoons grated Parmesan cheese, or more to taste
- 2 teaspoons chopped fresh chives, or to taste

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius) for optimal results.

Carefully position a potato between two wooden utensils, and then slice it across the middle at regular intervals of 1/8 inch, stopping just before you reach the handles. Be cautious not to cut all the way through - repeat this process with the remaining potatoes and arrange them on a baking sheet.

To add flavor, combine olive oil, minced garlic, paprika, and salt in a small container. Using a brush, evenly distribute the mixture over the top and between the potato slices.

Place the potatoes in a preheated oven and bake until they have slightly spread out and are cooked through on the inside but still retain a bit of crunch on the outside, approximately 45 minutes.

Finish by sprinkling 2 tablespoons of Parmesan cheese over the top and return to the oven for an additional 2-3 minutes, allowing it to melt.
