- 1 teaspoon olive oil
- 1 cup diced zucchini
- 1/2 cup minced onion
- 1 clove garlic, peeled and minced
- 2 cups diced fresh tomatoes
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 (6 ounce) halibut steaks
- 1/3 cup crumbled feta cheese

Preheat your oven to the highest temperature setting, which is 450 degrees F (230 degrees C).

Next, lightly coat the inside of a shallow baking dish with a thin layer of cooking spray or oil.

In a medium-sized saucepan, heat some olive oil over the middle heat setting and add sliced zucchini, chopped onion, and minced garlic. Cook, stirring occasionally, for 5 minutes or until the vegetables are tender.

Immediately remove the saucepan from the heat source and combine it with diced tomatoes, chopped fresh basil, salt, and pepper. Mix well.

Arrange the halibut steaks in a single layer on top of the prepared baking dish. Spoon an equal amount of the zucchini mixture over each steak, making sure to cover them evenly.

Top each halibut steak with a slice of feta cheese.

Place the baking dish in the preheated oven and bake for 15 minutes, or until the fish is easily flaked with a fork.
