Ingredients
- 1 tablespoon olive oil
- 3 cups frozen California-blend vegetables (broccoli, carrot, cauliflower)
- 1/2 cup water
- 1 stalk celery, chopped
- 1/2 medium onion, diced
- 1 clove garlic, minced
- 1 pinch paprika, or to taste
- salt and ground black pepper to taste
- 1 pound cod fillets
Instructions
1
Begin by preheating your oven to a high temperature of 400 degrees Fahrenheit. To prevent sticking, lightly coat the interior of a 2-quart baking dish with olive oil.
2
In a separate container, mix together the combined vegetables, water, chopped celery, sautéed onion, and minced garlic. Add a pinch of paprika, salt, and pepper to enhance the flavor.
3
Next, season the cod fillets lightly with your preferred spices. Arrange them on top of the vegetable mixture in the prepared baking dish.
4
Once the oven is preheated, place the baking dish inside and immediately lower the temperature to a moderate heat of 350 degrees Fahrenheit. Continue cooking until the fish becomes tender and flakes easily with a fork, approximately 30 minutes.
