- 1 eggplant, sliced into 1/2-inch-thick rounds
- 3 tomatoes, sliced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon oregano
- salt and ground black pepper to taste
- 1/3 cup grated Parmesan cheese

Preheat your oven to the highest temperature setting, which is 400 degrees Fahrenheit or 200 degrees Celsius.

Next, take a non-stick cooking spray and apply it liberally to the interior surface of your chosen baking dish.

Then, layer sliced eggplant and tomatoes in a single layer at the bottom of your prepared baking dish.

After that, drizzle a generous amount of olive oil over the vegetables and sprinkle with oregano, salt, and pepper to taste.

Finally, sprinkle a generous amount of Parmesan cheese over the top of your vegetables before placing them in the oven.

Once you've placed your dish in the preheated oven, bake until the cheese starts to turn golden brown, approximately 30 minutes.

To achieve an even more appealing finish, switch your oven's broiler to its highest setting and continue baking until the top is a deep golden brown, approximately 5 minutes.
