  • 3 cloves garlic, minced

  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten
  • 2 teaspoons olive oil

First, take the onion and wrap it in a piece of cheesecloth. Then, gently press out as much moisture from the onion as possible, making sure to extract every last drop. Set the now-dry onion aside for later use.

Next, combine garbanzo beans, parsley, garlic, cumin, coriander, salt, and baking soda in a food processor. Process the mixture until it reaches a coarse, textured consistency.

Mix the garbanzo bean mixture with the prepared onion in a bowl until well combined. Then, add flour and egg to the mixture and stir until it forms a cohesive whole.
