Oven-Baked Cod Fish Tacos with Zesty Cabbage Slaw
Ingredients
  • 1 pound cod fillets
  • 1 tablespoon olive oil
  • 1 lime, zested and juiced, divided
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup sour cream
  • 1 clove garlic, minced
  • 1 pinch salt
  • 1 small head red cabbage, shredded
  • 1/2 teaspoon white vinegar
  • 6 (7 inch) flour tortillas
  • 1 tomato, diced
Instructions
1
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
2
Place the cod fillets in a casserole dish and anoint them with olive oil and 1 tablespoon of freshly squeezed lime juice. Sprinkle a blend of spices, including cumin, coriander, smoked paprika, and cayenne pepper, over the fish. Add a pinch of salt and a few grinds of black pepper to enhance the flavor.
3
Bake the fish in the preheated oven until it breaks apart easily with a fork, approximately 20 minutes. Remove the fish from the oven and use two forks to break it apart in the baking dish.
4
In a separate bowl, whisk together sour cream, minced garlic, lime zest, 1/4 teaspoon of additional lime juice, and a small amount of salt to create a tangy crema.
5
In another bowl, combine shredded cabbage, 1/4 teaspoon of lime juice, and a splash of vinegar to create a refreshing cabbage slaw.
6
Warm tortillas in the microwave on its default setting, covered with a damp paper towel to maintain moisture, for 30 to 45 seconds.
7
Assemble the tacos by layering each tortilla with a portion of cod, a spoonful of cabbage slaw, a dollop of crema, and sliced tomato. Serve the tacos hot immediately.
