Ingredients
- olive oil cooking spray
- 1 tablespoon olive oil, or more as needed
- 1 1/2 cups finely chopped tomatoes
- 1/2 cup minced onion
- 5 cloves garlic, minced
- 3 jalapeno peppers, seeded and minced
- 1/3 cup chicken broth
- 1/4 cup taco sauce
- 2 tablespoons all-purpose flour
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1 pound shredded, cooked rotisserie chicken
- 24 (6 inch) corn tortillas
- 3 cups shredded sharp Cheddar cheese
- 1 cup shredded lettuce, or to taste
- 1/2 cup sour cream
- 1/2 cup guacamole, or to taste
Instructions
1
First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, spray a large baking dish with olive oil cooking spray to prevent the taquitos from sticking.
3
Then, heat some oil in a large skillet over medium heat. Add diced tomatoes, an onion, minced garlic, and chopped jalapeno peppers to the skillet.
4
Combine chicken broth, taco sauce, flour, cumin, oregano, chili powder, and salt in the skillet.
5
Cook this mixture over medium heat until it's heated through, stirring occasionally - about 5 to 10 minutes.
6
Add shredded cooked chicken to the skillet and mix it in thoroughly.
7
Cook for another 2 to 3 minutes, until the chicken is hot.
8
Now, wrap eight tortillas in damp paper towels and microwave them on high for about 30 seconds.
9
Repeat this process two more times to heat the remaining tortillas.
10
Next, spoon about 2 tablespoons of the chicken mixture onto the center of a tortilla.
11
Add some shredded Cheddar cheese on top of the filling, then roll the tortilla tightly around it.
12
Place the rolled taquitos seam-side down in the prepared baking dish.
13
Repeat this process to form the remaining taquitos.
14
Spray the taquitos with cooking spray and sprinkle them with any remaining Cheddar cheese.
15
Finally, bake the taquitos in the preheated oven until the cheese is melted and they're crispy, about 20 to 22 minutes.
16
Arrange shredded lettuce on a serving platter and top it with the taquitos.
17
Serve the taquitos with a side of sour cream and guacamole.
