Oven-Baked Chicken Reuben with Sauerkraut and Swiss Cheese
Ingredients
  • 6 skinless, boneless chicken breast halves
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 (16 ounce) can sauerkraut, drained and pressed
  • 4 slices Swiss cheese
  • 1 1/4 cups thousand island salad dressing
  • 1 tablespoon chopped fresh parsley
Instructions
1
Preheat the oven to a moderate temperature of 325 degrees Fahrenheit (165 degrees Celsius).
2
Position the chicken in a well-oiled 9x13 inch baking dish, ensuring it is not touching the sides.
3
Add a pinch of salt and pepper to taste, allowing the flavors to meld together.
4
Deposit a layer of sauerkraut over the chicken, followed by a sprinkling of cheese slices.
5
Pour the dressing over the entire contents of the dish, covering it with a layer of aluminum foil to retain moisture.
6
Place the prepared dish in the preheated oven and bake for 90 minutes, or until the chicken is fully cooked through (a fork should be able to pass easily through and the juices should run clear).
7
Once cooked, remove the foil and sprinkle with chopped parsley for a pop of color.
8
Serve the dish hot, garnished with additional parsley if desired.
