  • 1/2 cup fresh lemon juice
  • 1/2 cup pitted kalamata olives, chopped
  • 2 ripe tomatoes, seeded and diced
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon finely chopped fresh oregano
  • 1 (8 ounce) package crumbled feta cheese
  • 1/2 pound dried orzo pasta
  • 1 cup chopped fresh parsley

Combine olive oil, freshly squeezed lemon juice, pitted and sliced olives, diced tomatoes, thinly sliced red pepper, red onion, minced garlic, dried oregano, and crumbled feta cheese in a spacious bowl. Allow the mixture to rest at ambient temperature for 1 hour.

Submerge a large pot of salted water in boiling point. Add the orzo and cook for 8 to 10 minutes, or until it reaches an al dente texture; drain and combine the cooked pasta with the tomato mixture. Sprinkle a handful of chopped parsley on top to garnish.
