- 1 1/2 cups fresh lime juice
- 3/4 cup olive oil
- 6 cloves garlic, sliced
- 2 teaspoons salt
- 6 tablespoons dried oregano
- 2 (1 pound) pork tenderloins

Combine the juice of several limes with olive oil, minced garlic, salt, and dried oregano in a large container designed for storing food. Seal the container and vigorously mix until everything is well incorporated. Check the flavor of the marinade for balance: if it's too acidic, add a bit more oil; if not enough flavor, add some more lime juice. The flavors of garlic and salt should also be apparent, but not dominating. Place the tenderloins into the bag or container, seal it again, and make sure they're fully coated with the marinade. Refrigerate for 2 to 5 hours.

Take the tenderloins out of the marinade and shake off any remaining liquid. Discard the leftover marinade.

Heat a grill outdoors to a medium temperature and lightly brush it with oil. Place the tenderloins on the preheated grill and cook for 20 to 30 minutes, turning them once or until they're cooked to your liking. To check if they're done, insert a thermometer into the center of one of the tenderloins and wait for it to read at least 145 degrees F (63 degrees C).
