Orange Juice Pulled Pork
Ingredients
  • 1 (5 pound) pork butt roast
  • 1 cup water
  • 1/2 cup orange juice
  • salt and ground black pepper to taste
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon stone-ground mustard, or more to taste
  • 1 large sweet onion (such as Vidalia®), chopped
Instructions
1
Place the pork butt in the slow cooker, positioning it so that the more marbled side is facing upwards. Fill the slow cooker with water and orange juice, making sure to cover the pork completely. Sprinkle salt and pepper over both the meat and liquid for added flavor.
2
In a small bowl, combine minced garlic and Dijon mustard; spread evenly over the surface of the pork butt. Sprinkle a layer of chopped onion on top of the mustard mixture for added texture.
3
Cook the pork butt in the slow cooker on Low for 6 to 8 hours, periodically turning it over to ensure even cooking. The meat should be tender and easily shreds with a fork when pulled apart.
4
Once the pork is cooked, remove it from the slow cooker and let it rest until it has cooled down enough to handle. Discard any visible chunks of excess fat that may have accumulated during cooking.
5
Shred the remaining pork into tender strands using two forks. Return the shredded pork to the slow cooker and stir gently to combine.
6
Spoon portions of the pulled pork into individual serving containers using a slotted spoon, leaving excess juices behind.
