  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 (1 1/2 inch) piece fresh ginger, grated
  • 2 cloves garlic, crushed, or more to taste
  • 1 cup orange juice
  • 1 tablespoon sambal oelek

Place the fish fillets in a glass container; sprinkle both sides with black pepper and curry powder. Drizzle soy sauce over the fish, ensuring it covers both sides of the fillets. Allow the fish to marinate for at least 20 minutes.

Heat a generous amount of olive oil in a saucepan over medium-high heat. Gently place the fish fillets into the hot oil and cook until they develop a golden brown color, approximately 3 minutes on each side. Introduce the sliced ginger into the pan and stir it around to distribute its flavor evenly; cook until the aroma of ginger fills the air, roughly 1 minute. Monitor the pan closely to prevent any burning.

Decrease the heat to medium-low. Pour any remaining marinade into the pan, along with a squeeze of fresh orange juice.

Cook until the fish becomes tender and flakes easily, approximately 10 minutes. Remove the cooked fish from the pan and set it aside. Stir sambal oelek into the remaining marinade in the pan. Cook the sauce until it thickens and reduces, roughly 5 minutes. Pour the reduced sauce over the cooked fish and serve immediately.
