- 1/2 teaspoon salt
- 1 tablespoon grated orange zest
- 1 1/2 cups fresh cranberries
- 1/2 cup pecans, coarsely chopped
- 1/4 cup margarine, softened
- 1 cup white sugar
- 1 egg
- 3/4 cup orange juice

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. To prevent the loaf pan from sticking, lightly coat it with butter and dust it evenly with flour.

In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix these dry ingredients together until they are well blended.

Meanwhile, in a separate bowl, mix the orange zest, cranberries, and pecans. Set this mixture aside for now.

In another large bowl, use an electric mixer to cream together the butter and sugar until they form a smooth consistency. Add the egg and continue mixing until everything is well combined.

Add the orange juice to the bowl with the butter mixture and mix until smooth.

Then, gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Pour the batter into the prepared loaf pan and bake in the preheated oven until it springs back when touched lightly, approximately 1 hour.
