- 1 pork tenderloin
- 5 cups (1-inch) cubes peeled, seeded butternut squash
- 2 Granny Smith apples, cut into 1-inch wedges
- 1 white onion, cut into 1/2-inch slices

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Next, take some cooking spray and rub it all over a 13x18-inch baking sheet to prevent any food from sticking.

To make the marinade, combine 1 tablespoon of olive oil, a drizzle of honey, 1 teaspoon of salt, and 1 teaspoon of dried sage in a bowl. Add 1/2 teaspoon of black pepper to the mixture and whisk everything together until it's smooth.

Place your pork tenderloin on the prepared baking sheet and give the honey mixture a good coating all over.

In another bowl, mix together 1 medium-sized butternut squash, some chopped apples, and a small amount of onion until they're well combined. Drizzle the remaining 2 tablespoons of olive oil, a pinch of salt, and 1 teaspoon of dried sage over the vegetables. Toss everything together until they're evenly coated.

Place the butternut squash mixture around your pork tenderloin on the baking sheet.

Bake everything in the preheated oven for 30 to 35 minutes, or until your vegetables are tender and your pork is cooked through. Every so often, baste the pork with the honey mixture to keep it moist and flavorful.

Use a meat thermometer to check if your pork is cooked through - it should read at least 145 degrees Fahrenheit (63 degrees Celsius).
