- 1 (4 pound) chicken, cut into pieces
- 1 quart vegetable oil for frying, or as needed
- 1 cup sherry

Combine the dry ingredients of flour, garlic powder, salt, and pepper in a paper bag.

Add chicken pieces one by one to the mixture; thoroughly coat each piece and place it on a tray.

Heat 1 inch of oil in a large skillet over high heat, allowing it to reach the desired temperature.

Cook the chicken in the hot oil until it's golden brown and no longer pink in the center, as indicated by an internal temperature of at least 165 degrees F (74 degrees C).

Transfer the cooked chicken to a paper towel-lined plate, allowing excess oil to drip away.

Return the chicken to the skillet and pour in some sherry, covering it with a lid.
