  • 3 cups tomato sauce
  • 1 yellow onion, quartered
  • 4 tablespoons chicken bouillon (such as KnorrĀ®)
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 3 pounds lean ground beef
  • 3 eggs
  • 1/2 cup tomato sauce
  • 1/4 cup uncooked white rice
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon seasoned salt (such as Season-AllĀ®)
  • 1 tablespoon dried oregano leaves
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin
  • 10 small baby potatoes
  • 5 large carrots, sliced diagonally
  • 5 stalks celery, sliced diagonally
  • 2 zucchini, chopped
  • 2 cups thickly shredded green cabbage
  • 1 lemon, sliced into wedges
  • 2 avocados, chopped
  • 1/4 cup chopped fresh cilantro

Place water in a large stockpot and set it on the stovetop at maximum heat. Add 3 cups of tomato sauce, along with a chopped yellow onion, chicken bouillon cube, minced garlic, and 1 tablespoon of dried oregano. Wait for the mixture to reach a gentle simmer.

In another large bowl, combine ground beef, beaten eggs, 1/2 cup of tomato sauce, cooked white rice, chopped cilantro, a pinch of seasoned salt, 1 tablespoon of dried oregano, onion powder, garlic powder, black pepper, and ground cumin. Mix the ingredients thoroughly using your hands until they are well combined.

Form 1/4 cup of the beef mixture into a ball and gently lower it into the simmering broth. Repeat this process with the remaining beef mixture.

Add diced potatoes, carrots, and celery to the broth. Cover the pot and let it cook for about 30 minutes or until both the meatballs and potatoes are tender. Stir in grated zucchini and shredded cabbage, then cover again and let it cook for another 10 minutes or until the cabbage is tender.

Serve the dish hot, with a squeeze of lemon juice on top and garnish it with sliced avocado and a sprinkle of chopped cilantro.
