Oktoberfest Spaetzle Casserole
Ingredients
  • 1 teaspoon vegetable oil
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 eggs
  • 1/3 cup water
  • 2 slices bacon, diced
  • 1/2 large onion, chopped
  • 2 tablespoons butter
  • 1 small Gala apple, cored and chopped
  • 2 tablespoons brown sugar
  • 1 (16 ounce) package sauerkraut
  • 1 (16 ounce) package kielbasa sausage, cut into 2-inch pieces
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
To prevent the colander from sticking, lightly coat it with oil.
3
Combine 1 cup of flour and a pinch of salt in a bowl, whisking them together.
4
In a separate container, mix 2 eggs and 1/4 cup of water until well combined.
5
Pour the egg mixture into the flour mixture, stirring to form a smooth dough.
6
Fill a large pot with water and bring it to a rolling boil.
7
Carefully pour the spaetzle dough into the oiled colander, making sure to cover all of its surface area.
8
Place the colander over the boiling water, using a flexible spatula to gently push the dough into the water through its holes.
9
Stir the spaetzle constantly as they cook, checking on them every 30 seconds or so.
10
Once the spaetzle have risen to the surface, they are done (approximately 5 minutes).
11
Use a slotted spoon to carefully remove the spaetzle from the boiling water and transfer them to an ungreased 9x9-inch baking dish.
12
In a large skillet, cook the bacon over medium heat until it reaches your desired level of crispiness (approximately 8 minutes).
13
Remove the cooked bacon from the skillet, leaving its drippings behind.
14
Set the cooked bacon aside and continue cooking it in the same skillet until the onion is browned (approximately 10 minutes).
15
In a separate skillet, melt butter over medium heat until it becomes frothy.
16
Add sliced apples and a spoonful of brown sugar to the skillet, stirring until they are well combined.
17
Continue cooking and stirring the mixture until the apples have softened (approximately 5 minutes).
18
Transfer the cooked bacon, onions, and sauerkraut to the skillet with the apple mixture.
19
Cook everything together for an additional 5 minutes, stirring constantly to ensure even blending of flavors.
20
Pour the sauerkraut mixture over the spaetzle in the 9x9-inch baking dish.
21
Place cooked kielbasa pieces on top of the sauerkraut mixture.
22
Bake the dish in a preheated oven until it is hot and bubbly (approximately 15 minutes).
