Ingredients
- 1 tablespoon olive oil
- 1 small onion, minced
- 3 cloves garlic, minced
- 1 teaspoon cayenne pepper
- 1/2 medium green bell pepper, minced
- 1 pound frozen sliced okra
- 1 (15 ounce) can stewed tomatoes
- 1 (8 ounce) can canned diced tomatoes
- salt and ground black pepper to taste
Instructions
1
Apply a thin layer of olive oil to the surface of an oven-safe skillet and position it over medium heat. Introduce sliced onions, minced garlic, and a pinch of cayenne pepper into the skillet; stir constantly until the mixture emits a pleasant aroma, approximately 1 minute. Add diced green peppers and continue to cook until they become soft and tender, around 5 minutes.

Next, incorporate the frozen okra into the skillet and cook for another 5 minutes. Introduce both canned stewed tomatoes and diced tomatoes into the skillet, then sprinkle with salt and pepper to taste. Gradually decrease the heat to a lower setting and let the mixture simmer gently until all the vegetables have reached a tender consistency, taking anywhere from 5 to 7 minutes.
