Ingredients
- 1 cup regular rolled oats, plus additional
- 2 cups whole wheat flour
- 1/2 cup brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup melted butter
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 (12 fluid ounce) can or bottle GuinnessĀ® beer
Instructions
1
Preheat your oven to the highest temperature setting, which is 425 degrees Fahrenheit or 220 degrees Celsius. Next, take a moment to lubricate an 8x8-inch baking dish with some cooking spray.
2
In a separate container, combine the rolled oats, all-purpose flour, granulated sugar, baking soda, baking powder, and salt. Using a spoon or whisk, thoroughly mix these dry ingredients together.
3
In another large bowl, use an electric mixer to cream together the butter and vanilla extract. Gradually add in the buttermilk, followed by a small amount of Guinness stout beer. Once well combined, pour in the dry ingredients mixture and gently fold until everything is fully incorporated.
4
Carefully transfer the batter into your prepared baking dish, and if desired, sprinkle some additional oats on top for extra texture.
5
Place the baking dish in the preheated oven and bake for 30 minutes. After this initial period, reduce the temperature to 400 degrees Fahrenheit or 200 degrees Celsius and continue baking for an additional 30 minutes.
6
Once the timer goes off, turn off the oven and leave the door slightly ajar. Allow it to cool down inside for 30 minutes before carefully removing the finished cake onto a wire rack to cool completely.
