Ingredients
- 1 cup butter
- 1/2 cup packed brown sugar
- 2 eggs, separated
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 cups chopped walnuts
- 1 (12 fluid ounce) can ready-to-spread vanilla frosting
- 1 cup candy-coated chocolate peanuts
Instructions
1
Combine butter and sugar in a large bowl, stirring until they form a smooth and creamy consistency. Add egg yolks and vanilla to the mixture, blending well. In another bowl, combine flour and salt; then gradually incorporate this dry mixture into the creamy blend. Cover the bowl with a lid, and refrigerate for at least 1 hour.
2
Heat your oven to 350 degrees F (175 degrees C). Shape the dough into small balls, approximately 1 inch in diameter. Dip each ball into a lightly beaten egg white, then coat it with chopped walnuts. Place the walnut-coated balls 1 inch apart on baking sheets.
3
Bake the cookies in the preheated oven for 5 minutes. Remove them from the oven, and use your thumb to gently press down on the center of each cookie. Return the cookies to the oven, and bake for an additional 5 minutes. Remove the cookies from the oven, and let them cool on wire racks.
4
Once the cookies have cooled, spread a layer of frosting on top of each cookie. Place a chocolate-coated peanut on top of the frosting to complete the dessert.
