- 1 cup finely chopped onions
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped celery
- 1 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 bay leaf
- 3 cups cooked white rice

Fill a large container with the right amount of water to completely submerge the red beans. Allow them to soak for an extended period, typically 8 hours or overnight.

Next, drain the water from the container and rinse the beans thoroughly.

Subsequently, pour fresh hot water into the pot to replenish its contents. Add the soaked red beans along with some sausage, finely chopped onions, sliced bell pepper, diced celery, a pinch of cayenne pepper, salt to taste, and a bay leaf into the pot. Stir everything together.

Now, place the container over medium heat and put a lid on it to trap the flavors. Bring the mixture to a gentle simmer, stirring occasionally, for 30 minutes.

After that, decrease the heat to medium-low and continue cooking at a gentle simmer until the beans have become tender, taking around 30 minutes more.

Once done, remove and discard the bay leaf.
