- 5 potatoes
- 3 eggs
- 1 1/2 cups chopped celery
- 1/2 cup chopped onion
- 1/2 cup sweet pickle relish
- 1/4 cup low-fat mayonnaise
- 1 tablespoon prepared mustard
- 1/4 teaspoon celery seed
- 1 clove garlic, minced
- ground black pepper to taste

Fill a substantial container with potatoes and immerse them in salted water; initiate the boiling process. Gradually decrease the heat to a moderate, low-temperature setting and maintain the simmering state until the potatoes are fully tender, approximately 20 minutes.

Remove the potatoes from the heat and transfer them to a sink filled with cold, running water for several minutes. Once cooled, peel the potatoes and chop them into smaller pieces.

During this time, prepare a separate container by submerging eggs in water and bringing the mixture to a boil. Immediately remove the eggs from the heat source and allow them to sit in the water for 15 minutes.

Next, transfer the eggs from the hot water to a sink filled with cold, running water and peel them. Discard the egg yolks or reserve them for future use.

Combine the cooked potatoes, chopped egg whites, diced celery, sliced onion, relish, mayonnaise, mustard, ground celery seed, minced garlic, and pepper in a large mixing vessel. Thoroughly mix the ingredients together to create a cohesive blend, then refrigerate until chilled and ready for consumption.
