Ingredients
- 4 skinless, boneless chicken breast halves
- 1 onion, chopped
- 1 cup light sour cream
- 1 cup shredded reduced-fat Cheddar cheese
- 1 tablespoon dried parsley
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 (15 ounce) can tomato sauce
- 1/2 cup water
- 1 tablespoon chili powder
- 1/3 cup chopped green bell pepper
- 1/3 cup chopped red bell pepper
- 1 clove garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 8 (10 inch) whole wheat flour tortillas
- 1 (12 ounce) jar taco sauce
- 3/4 cup shredded reduced-fat Cheddar cheese
Instructions
1
Firstly, preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius for those using metric measurements).
2
Next, cook the chicken in a non-stick pan over medium heat until it reaches a safe internal temperature of 165 degrees Fahrenheit (or 74 degrees Celsius). This should take around 10 minutes per side, or until the juices run clear.
3
Following that, remove any excess fat from the cooked chicken and then chop it into small pieces. Return these pieces to the pan.
4
Now, add a variety of ingredients including an onion, a generous amount of sour cream, 1 cup of Cheddar cheese, some chopped parsley, oregano, and a few grinds of black pepper. Heat the mixture until the cheese has melted and everything is well combined, taking around 3 minutes to achieve this.
5
Subsequently, stir in some salt, a can of tomato sauce, water, chili powder, chopped green and red bell peppers, garlic, and black beans to create a rich and flavorful sauce.
6
After that, take small amounts of the chicken mixture and roll them into tortillas. Arrange these in a 9x13-inch baking dish.
7
Following the arrangement of the chicken mixture, cover it with taco sauce and a generous amount of 3/4 cup Cheddar cheese.
8
Finally, bake the dish uncovered in the preheated oven for around 20 minutes, or until the cheese is melted and the sauce is bubbling.
9
After baking, let the dish cool for 10 minutes before serving.
