- 1 1/4 cups buttermilk
- 1 large egg, beaten
- 1/4 teaspoon vanilla extract
- 1 tablespoon unsalted butter, or as needed

Combine buckwheat flour, sugar, baking powder, and salt in a medium-sized bowl. Mix until the ingredients are well incorporated.

In a separate large bowl, combine buttermilk, an egg, and vanilla extract. Beat the mixture until it's smooth and well combined.

Gradually add the flour mixture to the wet ingredients, whisking continuously until you achieve a thick and smooth batter. Allow the batter to rest for approximately 5 minutes, during which time it will start to bubble and relax.

Heat butter on a griddle over medium heat. Once hot, use a spoon to drop large quantities of the batter onto the griddle. Cook for 3-4 minutes, or until bubbles appear on the surface and the edges start to dry. Flip the pancakes over and cook for an additional 2-3 minutes, or until they're golden brown on the other side. Repeat with any remaining batter.
