Nutritious Blueberry Muffins
Ingredients
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/3 cup applesauce
  • 1 egg
  • 1/3 cup milk
  • 2 cups fresh blueberries
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
To prevent sticking, lightly spray muffin cups with a non-stick cooking spray or line them with paper liners.
3
Mix together 1/2 cup granulated sugar, 1/3 cup all-purpose flour, softened butter, and a pinch of cinnamon in a small bowl using a fork until the mixture forms a coarse, crumbly texture. Set the topping aside for now.
4
In a large mixing bowl, whisk together 1 1/2 cups all-purpose flour, the remaining 3/4 cup granulated sugar, and baking powder.
5
In a separate container, measure out 1/2 cup applesauce using a 1-cup measuring cup. Crack in an egg and add enough milk to fill the measuring cup, resulting in a total of 1 cup. Stir well and then gently fold the wet ingredients into the flour mixture until just combined.
6
Gently fold in 1/2 cup fresh or frozen blueberries.
7
Fill the prepared muffin cups to the top and sprinkle with the set topping.
8
Bake in the preheated oven for 20 to 25 minutes, or until the muffins are golden brown and the tops spring back when lightly pressed.
