  • 2 (6 ounce) cans tomato paste
  • 1/2 cup water
  • 2 tablespoons chopped fresh parsley
  • 1 1/2 teaspoons dried basil leaves
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon ground black pepper
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 3/4 pound low fat mozzarella cheese, sliced
  • 3/4 cup grated Parmesan cheese

Begin by preheating your oven to a high temperature, 375 degrees F (190 degrees C). Next, bring a large container of salted water to a rolling boil. Then, cook lasagna noodles in the boiling water for 8 minutes, stirring occasionally until they are tender yet still firm to the bite. Remove them from the water and set aside.

In a large pan, heat a cooking vessel over medium heat. Add sliced turkey sausage and ground turkey, along with chopped onion and minced garlic; cook and stir until the mixture is well browned, taking about 15 minutes. Then, add crushed tomatoes, tomato sauce, and tomato paste to the pan; stir in some water as well. Season with dried parsley, fresh basil, Italian seasoning, fennel seeds, and black pepper; let it simmer, uncovered, for 1 1/2 hours, stirring occasionally.

While the sauce is cooking, prepare your baking dish. Fill the bottom of a 9x13 container with 1 1/2 cups of sauce. Arrange 6 lasagna noodles lengthwise over the sauce, then spread half the ricotta cheese over the noodles; top with one third of sliced mozzarella. Spoon 1 1/2 cups of sauce over the mozzarella; sprinkle with 1/4 cup grated Parmesan. Repeat this layering process, finishing with a layer of remaining mozzarella and Parmesan cheese on top. Cover the dish with aluminum foil, making sure it doesn't touch the cheese to prevent sticking.

Place your covered baking dish in the preheated oven and bake until the sauce is hot and the cheese is melted, taking about 25 minutes. Remove the foil; continue baking until the cheese is golden brown, adding another 25 minutes to the cooking time. Let it cool for 15 minutes before serving.
