Nova Scotia Seafood Chowder
Ingredients
  • 2 large onions, diced
  • 3 carrots, sliced
  • 7 potatoes, cubed
  • 1 pound salmon, cut into chunks
  • 1 pound cod, cut into chunks
  • 1 pound scallops
  • 1 pound shrimp, peeled and deveined
  • 6 ounces cooked lobster meat, shredded
  • 1 (6 ounce) can crabmeat, drained and flaked
  • 2 (6.5 ounce) cans chopped clams, drained
  • 4 1/4 cups heavy whipping cream
  • 2 cups half-and-half
  • 1 1/2 cups butter, cut into chunks
  • salt and ground black pepper to taste

Fill a large pot approximately half full with water that has been lightly seasoned with salt; place it over high heat and bring the mixture to a rolling boil.

Add sliced onions and chopped carrots; continue cooking until they begin to soften slightly, around 10 minutes.

Next, add diced potatoes; continue cooking until they become tender, taking approximately 15 to 20 minutes.

Introduce a variety of seafood including salmon, cod, scallops, shrimp, lobster, and crab into the pot; cook over medium heat until the salmon and cod have become firm but retain a hint of translucency in their centers, roughly 10 minutes.

Remove half the water from the pot and add clams, a rich and creamy sauce made with heavy cream and half-and-half, and small pieces of butter; season the mixture with salt and black pepper to taste.

Cover the pot and let it simmer, stirring occasionally, until the salmon and cod are fully cooked and can be easily flaked with a fork, approximately 30 minutes.
