Norwegian Meatballs with Cream Sauce
Ingredients
  • 3/4 cup plain bread crumbs
  • 1/2 cup milk
  • 2 eggs
  • 1 large onion, grated
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon salt
  • 2 teaspoons ground nutmeg
  • 2 teaspoons minced garlic
  • 1 1/2 teaspoons ground black pepper
  • 3 pounds 85% lean ground beef
  • 3 tablespoons butter
  • 2 tablespoons minced onion
  • 5 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1/2 cup heavy cream
  • 1 dash cayenne pepper
  • 1 dash white pepper
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Next, take a moment to prepare your baking surface by greasing a jelly roll pan.
3
In a separate mixing bowl, combine the bread crumbs with milk, eggs, finely chopped onion, grated ginger, a pinch of salt, some ground nutmeg, minced garlic, and black pepper. Allow the bread crumbs to absorb the liquid ingredients for about 5 minutes, until they become evenly saturated.
4
Using a spoon or whisk, gently stir the mixture until just combined and then add ground beef to the bowl. Mix everything together until you achieve a well-blended consistency.
5
To shape your mixture into meatballs, use your hands to create 1-inch balls and place them on the prepared jelly roll pan.
6
Place the meatballs in the preheated oven and bake until they are nicely browned, taking about 18 minutes to achieve this.
7
Set the cooked meatballs aside on a plate or tray, allowing them to cool slightly.
8
In a large skillet, melt butter over medium-high heat on the stovetop.
9
Add sliced onion to the skillet and sauté until it becomes tender, taking about 3 minutes.
10
Add a spoonful of flour to the skillet and cook until it becomes lightly browned, about 2 minutes.
11
Slowly pour in the broth, stirring constantly as it cooks and thickens into a smooth gravy.
12
Add a splash of cream, some cayenne pepper, and black pepper to the gravy, blending everything together until well combined.
13
Add the cooked meatballs to the gravy and gently stir them in, heating everything through without boiling.
14
Take an additional 5 minutes to heat the meatballs and gravy together, stirring occasionally until they are well combined.
