- 2 1/4 cups bread flour
- 3/4 cup semolina flour
- 1 teaspoon anise seed
- 1 1/2 teaspoons salt
- 1/2 teaspoon white sugar
- 2 teaspoons active dry yeast
- 1 tablespoon olive oil
- 1 tablespoon sesame seeds

Insert the first set of ingredients into the bread machine's pan in accordance with the manufacturer's guidelines. Choose the DOUGH cycle and initiate the Start function. Do not include olive oil or sesame seeds in this process.

Once the dough cycle is completed, carefully remove the dough from the machine and gently press down on it to release any air bubbles. Divide the dough into two equal portions, then shape each portion into a ball. Flatten the balls to an approximate thickness of 19 millimeters. Place them on a lightly dusted baking sheet, ensuring they are not overlapping. Cover the loaves with clean towels and allow them to rise until they have doubled in size, approximately 30 minutes.

Preheat your oven to a temperature of 400 degrees Fahrenheit (200 degrees Celsius). Brush the surface of each loaf with olive oil, and if desired, sprinkle sesame seeds on top. Use a fork to create small holes all over the surface of each loaf, allowing steam to escape during baking.

Bake the loaves in the preheated oven for 20 to 25 minutes, or until they have achieved a golden color and produce a hollow sound when tapped. Serve the warm or cooled bread as desired
