Noodle Pudding Casserole

  • 1 (12 ounce) package thin egg noodles
  • 6 onions, diced
  • 1/8 cup vegetable oil for frying
  • salt and pepper to taste
  • 4 eggs
  • 1/4 cup dry bread crumbs
  • paprika to taste

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.

To prepare the baking dish, lightly coat it with butter or margarine to prevent food from sticking.

Next, fill a large pot with water and add salt to taste. Place the pot over high heat and bring the water to a rolling boil.

During this time, cook your pasta according to package instructions until it reaches the al dente stage. Drain the water and set the cooked pasta aside.

While your pasta is cooking, heat oil in a medium-sized saucepan over medium heat on your stovetop. Add sliced onions to the pan and cook until they are soft and caramelized, stirring occasionally.

Add salt and pepper to taste as you continue cooking the onions.

In a large mixing bowl, combine your cooked pasta, sautéed onions, beaten eggs, bread crumbs, and a pinch of salt and pepper to suit your taste. Mix everything together until it is well combined.

Transfer the pasta mixture into a greased 9 x 13 inch baking dish. Sprinkle some paprika over the top of your pasta mixture for added flavor.
