- 2 teaspoons vanilla extract
- 8 eggs
- 7 teaspoons baking powder
- 8 cups all-purpose flour
- 2 teaspoons anise extract

- 1 cup chopped walnuts
- 2 egg yolks, lightly beaten

Preheat the oven to its highest temperature setting, which is 375 degrees Fahrenheit or 190 degrees Celsius.

In a large mixing container, combine the softened butter and granulated sugar using an electric mixer. Gradually incorporate the vanilla extract and eggs into the mixture while continuing to blend.

Measure out the dry ingredients - flour and baking powder - into a separate container. Using a spoon, gently fold these dry ingredients into the egg mixture.

For traditional plain biscotti, proceed without adding any additional ingredients. However, if you're looking to enhance the flavor with anise extract and seeds, now is the time to incorporate these into your dough.

Wet or lightly grease your hands and shape the dough into four long, rectangular logs. The length of these logs should be comparable to your baking sheet.

Using a gentle pressing motion, shape each log into a rectangular shape that is approximately 3/4 inch thick and 3 inches wide. Brush the tops of these logs with beaten egg yolks.

Place the prepared biscotti logs in the preheated oven and bake for 15 minutes, or until they are golden brown.

Using a sharp knife, slice the biscotti logs at an angle to create individual cookies. Cut these cookies into 1/2 to 3/4-inch wide pieces.

Arrange the sliced biscotti cookies back onto the baking sheet, standing upright if possible. Leave a small gap between each cookie to allow for even cooking.
