Ingredients
- 1 1/2 cups crushed graham crackers
- 1/2 cup white sugar
- 6 tablespoons unsalted butter, melted
- 1 cup boiling water
- 1 (3 ounce) package lemon-flavored gelatin mix (such as Jell-O®)
- 1 (14 ounce) can chilled sweetened condensed milk
- 1 (8 ounce) package cream cheese, at room temperature
- 1 large lemon, zested and juiced
Instructions
1
Preheat your oven to the desired temperature of 350 degrees F (175 degrees C).
2
To create the crust, blend together graham cracker crumbs, sugar, and melted butter in a mixing container until they are uniformly moistened. Then, press the mixture into the bottom of a 9-inch pie dish to form the base.
3
Place the crust in the preheated oven and bake until it is lightly browned, taking approximately 8 to 10 minutes. Remove the crust from the oven and allow it to cool, requiring around 15 to 20 minutes.
4
Simultaneously, combine boiling water with gelatin powder in a separate container. Allow the mixture to dissolve and cool down, taking about 15 to 20 minutes. Be sure not to let the gelatin mixture set.
5
In a separate bowl, combine the cooled gelatin mixture with condensed milk, cream cheese, lemon zest, and juice. Use an electric mixer to beat the ingredients together until they are well combined, taking around 3 to 4 minutes. Then, pour the filling into the cooled crust.
6
Finally, refrigerate the pie until it is set, which should take approximately 2 hours.
