Ingredients
- 2 (13.5 ounce) packages soft, frosted sugar cookies (such as Lofthouse®)
- 1 (8 ounce) package cream cheese, softened
- 2 (8 ounce) packages white candy melts
- 24 lollipop sticks
- 1 tablespoon multicolored candy sprinkles, or to taste
Instructions
1
Preheat your oven to the desired temperature and line a baking sheet with parchment paper for easy cleanup.
2
Combine cookies and cream cheese in the bowl of a stand mixer, blending them together until you achieve a smooth consistency. This step is crucial in creating the perfect mixture for your cake pops.
3
Divide the cookie and cream cheese mixture into 24 equal portions, shaping each one into a 1 1/2-inch ball. Place these balls onto the prepared baking sheet, making sure they are evenly spaced.
4
To add a fun twist to your cake pops, insert a lollipop stick into each ball before refrigerating them for 10 minutes. This will make it easier to handle and display your finished cake pops.
5
While the cake pops are chilling, prepare the candy coating by placing it in the top of a double boiler over simmering water. Stir frequently, using a rubber spatula to scrape down the sides and avoid scorching, until the candy coating has melted and reached your desired consistency, typically taking 3 to 5 minutes.
6
Once the cake pops have chilled, remove them from the refrigerator and dip each one into the melted candy coating. Allow any excess to drip off, then return the cake pops to the lined baking sheet.
7
To add a decorative touch, sprinkle immediately with sprinkles before letting the coating set completely. This should take about 10 minutes, allowing you to display your beautifully decorated cake pops.
