Ingredients
- 1 (16 ounce) package fresh strawberries, hulled and large berries cut in half
- 1 pint fresh blueberries
- 1 (6 ounce) container fresh raspberries
- 1 (6 ounce) container fresh blackberries
- 1 cup water
- 1/2 cup white sugar
- 3 tablespoons cornstarch
- 1/4 cup water
- 1 (9 inch) prepared shortbread pie crust (such as KeeblerĀ®)

Combine the strawberries, blueberries, raspberries, and blackberries in a large mixing container. Remove 3/4 cup of the mixed berries and transfer them to a saucepan with 1 cup of water and sugar; reserve the remaining berries. Bring the mixture to a rolling boil and then lower the heat to a moderate simmer.

Mix the cornstarch with 1/4 cup of water in another bowl until it forms a smooth, even paste and then gently fold the cornstarch mixture into the hot fruit syrup; continue stirring until the mixture reaches a thick, gelatinous consistency, approximately 2 minutes. Allow the mixture to cool completely, stirring occasionally, for around 20 minutes.

Pour the thickened berry syrup into a separate bowl with the reserved berries and mix until they are fully incorporated; then, pour the berries and sauce into a pre-made shortbread pie crust. Refrigerate the pie until it is chilled, for at least 1 hour.
