Newfoundland Fish and Brewis
Ingredients
  • 2 hard bread cakes, such as Purity®, split horizontally
  • 1 pound salt cod steaks, skinned and cut into 1/2-inch strips
  • 1 teaspoon salt
  • 1/2 pound fatback, diced
Instructions
1
Submerge the hard bread in a container, covering it with multiple inches of chilled water. Secure the lid and allow the bread to rehydrate for an extended period, typically 8 hours or overnight.
2
Rinse the salt cod under a gentle stream of cool water, then place it in another container. Cover the fish with several inches of cold water and secure the lid, allowing it to marinate in the refrigerator for 8 hours or overnight.
3
Sprinkle salt over the rehydrated bread and heat it just enough to reach a gentle simmer, maintaining a medium-low temperature for 2 minutes. Remove the bread from heat immediately and cover it to maintain its warmth.
4
Drain the fish and replace the water with fresh liquid, bringing it to a rolling boil. Cook until the fish is opaque and can be easily flaked with a fork, approximately 20 minutes. Drain the fish and remove any bones. Combine the cooked fish with the prepared hard bread.
5
Cook the fatback in a pan over medium heat until it turns golden brown, taking around 10 minutes. Pour the fatback and its resulting drippings over the fish and bread mixture, stirring gently to combine. Serve the dish immediately.
