  • 2 bay leaves
  • 2 pinches paprika, or more to taste
  • salt and ground black pepper to taste
  • 3 cups cooked rice

Fill a large vessel with black-eyed peas and submerge them in several inches of cool water; allow to soak for 8 hours or overnight. Drain and rinse the peas thoroughly.

Heat olive oil in a cooking pot over medium heat; cook and stir diced ham until it reaches a browned color, approximately 5 minutes. Add chopped onion, green bell pepper, and minced garlic; sauté until the onion becomes tender, around 10 minutes. Add black-eyed peas, water, bay leaves, paprika, salt, and black pepper; cover the pot with a lid and bring the mixture to a simmer, allowing it to cook until the peas are tender, typically 40-50 minutes.

Remove the bay leaves from the black-eyed peas mixture and stir in cooked rice. Continue to cook until all the liquid has evaporated, taking an additional 5-10 minutes.
