  • 1 teaspoon lemon zest
  • 1 pinch salt
  • 1 egg yolk
  • 1 teaspoon white sugar, or as needed

Combine yeast and milk in a bowl, stirring until the yeast dissolves completely. Add 4 1/2 tablespoons of sugar and let it sit for about 5 minutes, allowing the yeast to soften and form a creamy foam.

Mix the yeast mixture with 2 1/4 cups of flour in a bowl until you get a dry, clumpy dough. Allow the dough to rest for 15 minutes and let it rise.

Add the remaining 1/2 cup of milk, butter, egg, lemon zest, and salt to the dough. Mix everything together until it's evenly combined.

Work the dough until it becomes elastic, adding more flour if necessary. Cover the bowl with a damp cloth or plastic wrap and let it rise in a warm place until it doubles in size, which should take about 1 hour.

Preheat your oven to 390 degrees F (199 degrees C). Grease a baking sheet with some oil or cooking spray.

Gently knead the dough, then shape it into a long rope on the prepared baking sheet. Twist the rope into a pretzel shape and cover it with a clean towel or plastic wrap.
