New Mexico Style Enchiladas

  • 1 tablespoon vegetable oil
  • 2 pounds skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1 (19 ounce) can enchilada sauce
  • 2 cups shredded iceberg lettuce
  • 2 cups shredded Colby cheese
  • 1 (12 ounce) package corn tortillas
  • 1 onion, chopped
  • 1/2 cup sour cream
  • 6 fried eggs

Preheat the cooking vessel by heating the oil in a large skillet over medium heat. Introduce the chicken pieces into the pan and cook until they achieve a browned appearance. Add a pinch of cumin and chili powder to enhance the flavor. Introduce the enchilada sauce into the pan, allowing it to simmer for approximately 15 minutes. Stir occasionally.

Meanwhile, prepare a secondary cooking surface by heating another skillet over medium heat. Warm the tortillas on this surface, taking care not to burn them as you want them to be flexible.

To construct the enchiladas, dip a tortilla into the enchilada sauce and position it on a serving plate. Add a layer of the meat and sauce, followed by some shredded lettuce, cheese, onion, and sour cream. Place another tortilla on top that has been dipped in the sauce. You can repeat this layering process as many times as you desire, depending on your appetite. Prepare additional stacks for each individual. If desired, top these stacks with a fried egg.
