New England Clam Soup for Two
Ingredients
  • 2 strips bacon strips, chopped
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 1 tablespoon all-purpose flour
  • 1 (14.5 ounce) can diced potatoes, drained
  • 1 (10.5 ounce) can clam juice
  • 1 cup whole milk
  • 1 (6.5 ounce) can chopped clams
  • 1 pinch Salt to taste
  • 1 pinch Ground white pepper to taste
  • 1 cup Oyster crackers
Instructions
1
Preheat a 3-quart saucepan over medium heat, allowing it to warm up. Cook and stir the crispy bacon in the hot saucepan until it reaches a golden brown state, approximately 5 minutes; transfer to paper towels to drain excess fat.
2
Next, cook and stir the celery and onion in the remaining bacon drippings within the saucepan until they become tender, roughly 5 minutes. Introduce flour into the mixture; cook for 1 minute to allow it to thicken.
3
Subsequently, add potatoes, clam juice, milk, and clams with their accompanying liquid to the saucepan. Bring the mixture to a rolling boil, then decrease the heat to low and let it simmer for 10 minutes to allow the flavors to meld together. Season with salt and white pepper to enhance the taste.
4
Finally, ladle the soup into bowls, garnish with crispy bacon, and serve with oyster crackers on the side.
