Nanny's Cranberry Pudding
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup milk
  • 1 egg
  • 2 tablespoons butter
  • 2 cups cranberries
  • 1/4 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup butter
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
Instructions
1
Combine 2 cups of flour, baking soda, 1 cup white sugar, cinnamon, and nutmeg in a large bowl. Blend the mixture thoroughly with milk, egg, and butter until it forms a smooth consistency. Coat the cranberries in the remaining 1/4 cup of flour and then incorporate them into the batter.
2
Transfer the batter to a greased round casserole dish with a lid, covering it again with aluminum foil. Place the dish inside a large roaster or stock pot and fill it with 3 to 4 inches of water. Cover the outer pot with aluminum foil as well and set the heat to medium-high. Steam the mixture for 2 hours, adding more water if required after the first hour.
3
In a separate saucepan, combine 1/2 cup white sugar, brown sugar, butter, and heavy cream over medium heat. Stir the mixture occasionally until it reaches a full boil. Boil for 1 minute, then remove from heat and stir in vanilla extract. Refrigerate the sauce until chilled, then use an electric mixer to beat it into a smooth consistency.
4
Serve slices of the steamed pudding with the brown sugar sauce and top with whipped cream.
