  • 1 (7 bone) rack of lamb, trimmed and frenched
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard

Firstly, make sure your oven is at a suitable temperature by preheating it to 450 degrees Fahrenheit. Ensure the center rack is in its optimal position.

Next, prepare a small bowl and combine bread crumbs, minced garlic, dried rosemary leaves, 1 teaspoon of salt, and a pinch of pepper. Thoroughly mix in 2 tablespoons of olive oil to soften the mixture, allowing it to become more cohesive. Set this bread crumb mixture aside for later use.

Then, season the rack of lamb on all sides with 1 teaspoon of salt and a pinch of pepper. In a large, heavy skillet suitable for oven use, heat 2 tablespoons of olive oil over high heat. Sear the lamb on all sides for about 1 to 2 minutes, then remove it from the skillet and let it rest for a few moments.

After that, brush the lamb with a layer of mustard and roll it in the bread crumb mixture until evenly coated. To prevent charring, cover the ends of the bones with foil.

Now, arrange the breaded rack of lamb bone-side down in the same skillet. Place it in the preheated oven and roast for 12 to 18 minutes, or until it reaches a medium doneness. Use an instant-read thermometer inserted into the center to check if it has reached at least 130 degrees Fahrenheit. If not, continue cooking until the desired doneness is achieved.

Finally, remove the lamb from the skillet and let it rest for 5 to 7 minutes before carving between the ribs.
