- 2 onions, chopped
- 1 pound fresh mushrooms, sliced
- 4 cups chicken broth
- 2 cups uncooked orzo pasta
- salt and pepper to taste

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Line a baking sheet with walnuts and place it in the oven to bake for 8-10 minutes, or until they emit a pleasant aroma. Gently stir the walnuts halfway through the toasting process.

In a large, heavy saucepan, heat oil over high heat on your stovetop. Add sliced onions and mushrooms to the saucepan, stirring occasionally until they are tender and golden brown.

Add a sufficient amount of broth to the saucepan, bringing it to a boil. Introduce orzo into the mixture and reduce heat to low. Cover the saucepan, allowing it to simmer until the orzo is tender and all liquid has been absorbed. If after 15 minutes, some liquid remains, remove the cover and continue cooking until all liquid has evaporated. Remove the saucepan from heat and stir in toasted walnuts. Season with salt and pepper to suit your taste preferences.
