Mushroom Spinach Frittata
Ingredients
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
  • 4 eggs or equivalent egg substitute
  • 1 cup part-skim ricotta cheese
  • 3/4 cup freshly grated Parmesan cheese
  • 3/4 cup chopped portobello mushrooms
  • 1/2 cup finely chopped scallions with some green tops
  • 1/4 teaspoon dried Italian seasonings
  • 1 pinch Salt and pepper, to taste
Instructions
1
Begin by preheating your oven to 375 degrees Fahrenheit, or 190 degrees Celsius, in order to achieve the optimal temperature for baking.
2
In a spacious bowl, combine all ingredients and blend them thoroughly until they are fully incorporated and the mixture is smooth.
3
Next, take a 9-inch pie plate and give it a light coating of cooking spray to prevent the spinach mixture from sticking.
4
Fill the prepared pie plate with the spinach mixture, making sure to cover the entire surface.
5
Bake the pie in the preheated oven for 30 minutes, or until it has reached a golden brown color and is set.
6
Allow the pie to cool for 20 minutes before cutting it into wedges, and then serve.
