  • 1 shallot, minced
  • 1 pound assorted wild mushrooms, sliced
  • 2 cloves roasted garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 bunch fresh thyme, leaves stripped and chopped
  • salt and black pepper to taste
  • 1/2 cup heavy cream
  • 1 (17.25 ounce) package frozen puff pastry, thawed

Preheat the oven to a high heat setting of 400 degrees Fahrenheit.

Heat a generous amount of olive oil in a large cooking vessel over an elevated heat level, which is medium-high. Add a small amount of shallot; cook and stir constantly until it becomes tender, approximately 5 minutes. Reduce the heat to a lower level, which is medium-low, and add mushrooms. Cook and stir regularly until the mushrooms have reduced in size by half, around 15 minutes. Introduce roasted garlic, Parmesan cheese, and thyme into the mixture; season to taste with salt and pepper. Stir in a creamy element to enhance flavor. Remove from heat and permit the mushroom mixture to cool, allowing it to thicken naturally.

Unfold a sheet of pastry onto a surface dusted with flour and gently roll it into a rectangular shape measuring 12 x 15 inches. Divide the pastry sheet into eighteen equal squares, each measuring 3 inches in size. Place a small mound of mushroom filling at the center of each square. Fold the pastry over the filling to form a triangular shape, and firmly pinch the edges together with a fork to seal them.
