Ingredients
- 6 tablespoons butter, divided
- 1 1/2 pounds baby bella (crimini) mushrooms, sliced
- 1/4 cup chopped sweet onion
- 1/2 lemon, juiced
- 1/2 teaspoon dried thyme
- 5 tablespoons all-purpose flour
- 1 1/4 cups Swanson® Chicken Broth
- 1/3 cup Marsala wine
- 2 tablespoons half-and-half
- salt and pepper to taste
- 1 (17.3 ounce) package frozen puff pastry, thawed
- 1 egg, beaten
Instructions
1
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2
To prevent the pie plate from sticking, lightly spray it with non-stick cooking spray.
3
Melt 3 tablespoons of butter in a large skillet over medium heat.
4
Add sliced mushrooms and chopped onions to the skillet, stirring occasionally until the liquid from the mushrooms has evaporated, approximately 10 minutes.
5
Introduce a squeeze of lemon juice and a sprinkle of thyme into the skillet, simmering for 2 minutes.
6
Melt an additional 3 tablespoons of butter in a separate saucepan.
7
Gradually whisk in flour, stirring constantly for about 1 minute.
8
Slowly pour in the Swanson Chicken Broth, Marsala wine, and half-and-half, whisking continuously until the sauce is smooth and thickened, around 3 minutes.
9
Ensure the sauce has reached a very thick consistency before seasoning to taste with salt and pepper.
10
Combine the mushroom mixture with the sauce broth/Marsala mixture; stir well.
11
Unroll one sheet of puff pastry to fit the pie plate.
12
Press the pastry evenly into the bottom and sides of the pie plate; trim any excess pastry.
13
Spoon the mushroom mixture into the pastry shell.
14
Unroll a second sheet of puff pastry, and place it on top.
15
Trim any excess pastry, and crimp the edge to seal the pie.
16
Cut a few slits in the top for steam to escape, allowing the pie to cook evenly.
17
Brush the top of the pie with the beaten egg for a golden glaze.
18
Bake the pie in the preheated oven until it's golden brown and the mushroom mixture is bubbly, approximately 40 minutes.
19
Allow the pie to cool slightly before serving.
