- 1/4 cup olive oil
- 1 cup chopped onion
- 3/4 cup diced carrots
- 1/2 cup chopped celery
- 1 teaspoon minced garlic
- 1 pound sliced fresh mushrooms
- 6 cups chicken broth
- 3/4 cup barley
- salt and pepper to taste

Heat a generous amount of oil in a substantial soup vessel over an intermediate heat setting. Introduce the onion, carrots, celery, and garlic into the pot; cook and stir until the onion has become pliable and its color has shifted to a pale hue, approximately 5 minutes. Incorporate the mushrooms into the mixture and continue cooking for roughly 3 minutes.

Introduce a substantial quantity of chicken broth into the pot, add barley, and bring the mixture to a rolling boil. Gradually decrease the heat to a low setting, cover the pot, and allow it to simmer until the barley has reached a tender state, approximately 40 to 50 minutes.
