Mujadarrah with Fried Onions
Ingredients
  • 6 tablespoons olive oil
  • 1 large white onion, sliced into rings
  • 1 1/3 cups uncooked green lentils
  • 3/4 cup uncooked long-grain white rice
  • salt and pepper to taste
  • 1/4 cup plain yogurt or sour cream

Preheat a large skillet over medium heat, then pour in the olive oil. Introduce the onions into the skillet and cook for approximately 10 minutes, or until they have turned a deep brown color. Take the skillet off the heat source and set it aside for now.

Next, fill a medium-sized saucepan with lentils and add enough lightly salted water to completely submerge them. Bring the mixture to a rolling boil, then gradually decrease the heat and let it simmer for around 15 minutes.

Now, combine cooked rice with enough water to cover the saucepan contents. Add a pinch of salt and pepper to taste, then cover the saucepan with a lid. Continue to cook for an additional 15-20 minutes, or until both the rice and lentils are tender.

Once the rice and lentil mixture is cooked, mix half of the sautéed onions into it. Finally, top this mixture with a dollop of yogurt or sour cream and the remaining onions to complete your dish.
