Mrs. Landesman's Gazpacho
Ingredients
  • 3 cloves garlic, crushed
  • 1 onion, coarsely chopped
  • 1 cucumber, sliced
  • 1 green bell pepper, seeded and chopped
  • 5 tomatoes, peeled and quartered
  • 1/4 cup olive oil
  • 1/4 cup distilled white vinegar
  • 1 bunch fresh parsley, chopped
  • salt and pepper to taste
  • 1 teaspoon paprika
  • 1 (12 fluid ounce) can tomato juice

In a food processor or blender, combine the minced garlic, chopped onion, sliced cucumber, diced bell pepper, chopped tomatoes, olive oil, apple cider vinegar, fresh parsley leaves, salt, and black pepper. Process until you achieve the desired consistency.

Next, add the prepared tomato sauce and a pinch of paprika to the mixture. Transfer it to a serving bowl or container. Allow the salad to chill in the refrigerator for at least 1 hour, enabling the flavors to meld together.

Alternatively, you can also prepare this salad in a large bowl. Combine all the ingredients except the tomato sauce and paprika, and refrigerate for 30 minutes to allow the flavors to combine. Then, stir in the tomato sauce and paprika before serving.
